Rich, hearty, and full of real beef flavor. Our beef shank comes from our grass fed, grass finished Irish Dexter cattle and is USDA processed and frozen at Cypress Valley Meat Processing to lock in taste and quality. The shank is a working muscle so it has plenty of connective tissue and marrow. That means long, slow cooking turns it into melt in your mouth meat and gives you a deeply savory stock or sauce.

Cooking notes and why you will love it

  • Best method: low and slow. Braise in the oven at 300–325°F for 2.5 to 3.5 hours or simmer gently on the stove until the meat pulls apart.

  • Try it cross cut for osso buco, or roast whole for stews and soups. The marrow in the bone adds richness and body to any dish.

  • Flavor profile: beef forward, meaty, and comforting. Perfect with mashed potatoes, polenta, or buttered egg noodles and a splash of red wine in the braising liquid.

  • Serves well as a weeknight slow cooker meal or the center of a Sunday supper.

Storage and prep

  • Keep frozen until ready to use. Thaw in the fridge overnight.

  • Pat dry before browning for best color and crust.

  • Remove excess fat if desired but keep some for flavor during braising.
